Prepare the Scallops: Rinse the scallops under cold running water and pat them dry thoroughly with paper towels. Remove any translucent muscle tissue from the sides. Arrange the scallops on the rack and season with salt and pepper.
Smoke the Scallops: Place the baking sheet on the grill grates. Close the lid and smoke the scallops for 20 minutes.
