How to Cook Perfect Traeger Pork Steaks

Cooking a tomahawk steak on your Traeger grill is a rewarding experience that promises a flavorful and tender steak every time. Follow this easy-to-follow recipe to impress your guests at any BBQ occasion.

Ingredients:

  • 1 tomahawk steak (approximately 2 inches thick)
  • Meat Church rub (or your favorite steak seasoning)
  • Olive oil
  • Fresh rosemary sprigs
  • Garlic cloves, smashed
  • Butter

Equipment:

  • Traeger grill
  • Meat thermometer
  • Grill tongs
  • Aluminum foil

Instructions:

  1. Preparation:

    • Remove the tomahawk steak from the refrigerator and allow it to come to room temperature. This usually takes about 30-60 minutes.
    • Pat the steak dry with paper towels. This helps to get a nice sear on the grill.
  2. Seasoning:

    • Lightly coat the steak with olive oil. This helps the seasoning adhere better and adds a layer of flavor.

  3. Preheat the Traeger Grill:

  4. Smoking the Steak:

    • Place the seasoned tomahawk steak directly on the grill grates. Close the lid and smoke until the internal temperature reaches 115°F (46°C) for rare or 120°F (49°C) for medium-rare. This usually takes about 45-60 minutes, depending on the thickness of the steak.
    • Use a meat thermometer to monitor the temperature accurately.
  5. Searing the Steak:

    • Once the steak reaches the desired internal temperature, remove it from the grill and cover it with aluminum foil. Let it rest while you increase the grill temperature.
    • Increase the Traeger grill temperature to 450°F (232°C) or higher. Preheat for 15 minutes with the lid closed.
    • Place the steak back on the grill for 2-3 minutes per side, or until a nice crust forms. This high heat sear will give the steak a flavorful exterior while keeping the inside tender and juicy.
  6. Finishing Touches:

    • In the last minute of grilling, add a few sprigs of fresh rosemary, smashed garlic cloves, and a pat of butter on top of the steak. This will enhance the flavor and aroma of the meat.
