Ingredients

  • 2 pounds large dry sea scallops
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 tablespoons salted butter, melted
  • 1 clove garlic, minced
  • Zest of 1/2 small orange, plus more for garnish
  • Juice of 1/2 small orange
  • 1/4 teaspoon Worcestershire sauce
  • 1 1/2 teaspoons chopped fresh parsley or tarragon, plus more for garnish

Instructions

  1. Prepare the Grill: Preheat your Traeger grill to 165°F and use Super Smoke if available. Preheat with the lid closed for 15 minutes. Set a wire rack over a baking sheet.

  2. Prepare the Scallops: Rinse the scallops under cold running water and pat them dry thoroughly with paper towels. Remove any translucent muscle tissue from the sides. Arrange the scallops on the rack and season with salt and pepper.

  3. Smoke the Scallops: Place the baking sheet on the grill grates. Close the lid and smoke the scallops for 20 minutes.

  4. Prepare the Sauce: While the scallops are smoking, melt the butter in a small saucepan over medium-low heat. Add a pinch of salt, garlic, orange zest and juice, Worcestershire sauce, and parsley. Simmer for 5 minutes to blend the flavors. Keep the sauce warm until ready to use.

  5. Roast the Scallops: Increase the grill temperature to 400°F and preheat with the lid closed for 10 minutes. Return the baking sheet with the scallops to the grill and brush them with some of the orange-butter sauce, reserving the rest for serving. Close the lid and roast the scallops for 10-15 minutes, flipping once, until they are just opaque and tender. Be careful not to overcook them.

  6. Serve: Garnish the scallops with extra orange zest and parsley. Serve hot with the remaining warm citrus and garlic butter sauce.

Conclusion
