Once you have all your ingredients, you need to make a marinade.
You can cook your shrimps with or without shells, but it boils down to your recipe. However, most people like it with the shell peeled off.
Here is how to go about it? Start by pulling off the legs, and the shell comes out pretty easily.
On the other hand, if you want to cook the shrimps with the shells, you should remove the digestive tract running along the back, commonly called the vein. Use a small sharp knife or a pair of kitchen scissors to cut through it from the head to the tail.
After removing the shell or cutting the vein, you should rinse your shrimps using cold running water.
Mix lime juice, salt, pepper, olive oil, tequila, and a small amount of water in a bowl to make a marinade. You can also transfer the marinade to a plastic bag (optional).
Soak your shrimp in the bowl for about 30 minutes to two hours or 8 hours before cooking. However, if your marinade is very acidic, less than 30 minutes of soaking is enough to avoid the acidity from breaking down the delicate shrimp meat that leads to mushy shrimps.
You can as well marinate your shrimp in a fridge.
After your shrimps are well marinated, it’s time to thread them to your kabob sticks. It’s a simple process.
Thread a skewer through 4-6 shrimps (it depends on the size of the shrimps). Always select the thickest part of the shrimp. Usually, the tail section should be the last part to cut to a skewer.
Repeat the above process and make as many shrimp skewers as needed.
Note: you can thread skewers before or after marinating.
Once your shrimps are well-threaded on the skewers, cooking should start. However, you have to let your electric griddle heat up at least for about 5 to 10 minutes before you begin the actual cooking.
After the griddle is preheated, add some butter to it and allow it to melt. It prevents your shrimps from sticking on the cooking surface and adds flavor. However, most electric griddles have a non-stick cooking surface, and thus, you don’t have to worry much about food sticking on the cooking surface.
